Great antipasta recipe

Ingredients

6 roasted peppers, different colors
1⁄2csun dried tomatoes, chopped
1cmixed olives in oil, chopped
1 small can artichoke hearts, drained and chopped
1⁄2cpepperoncini’s, sliced
6Tbalsamic vinegar (red wine vinegar will work as well)
2 garlic cloves, minced
1colive oil
1thot sauce (optional)

Instructions

Using a whisk mix the olive oil, balsamic vinegar, garlic and hot sauce. Set aside. Rough chop the roasted peppers and add the tomatoes, olives, artichoke hearts and pepperoncini’s in a large bowl. Drizzle with the dressing.
