Description
Great antipasta recipe
Ingredients
| 6 | roasted peppers, different colors | |
| 1⁄2 | c | sun dried tomatoes, chopped |
| 1 | c | mixed olives in oil, chopped |
| 1 | small can artichoke hearts, drained and chopped | |
| 1⁄2 | c | pepperoncini’s, sliced |
| 6 | T | balsamic vinegar (red wine vinegar will work as well) |
| 2 | garlic cloves, minced | |
| 1 | c | olive oil |
| 1 | t | hot sauce (optional) |
Instructions
Using a whisk mix the olive oil, balsamic vinegar, garlic and hot sauce. Set aside. Rough chop the roasted peppers and add the tomatoes, olives, artichoke hearts and pepperoncini’s in a large bowl. Drizzle with the dressing.
