Description
Nice warm vegetable soup
Ingredients
| 3 | T | olive oil |
| 1 | large sweet onion, chopped | |
| 1 | T | tomato paste |
| 1 | lb | roma tomatoes, chopped |
| 1 | medium zucchini, chopped | |
| 1 | medium yellow squash, chopped | |
| 2 | small red potatoes, chopped | |
| 2 | garlic cloves, minced | |
| 6 | c | chicken stock |
| 6 | T | fresh basil, rough chopped |
Instructions
Heat the oil in a large pot. Add the onion and cook until softened but not browned. Add the tomato paste and potatoes. Cook for 10-12 minutes, stirring often. Add the garlic, tomatoes, zucchini, squash and stock and bring to a simmer. Simmer for 15 minutes or until vegetables are tender. Remove from heat and add the basil. Put into serving bowls and sprinkle with the cheese.
